Oatmeal
One of the reasons that this recipe is so good is because I have eliminated the raisins (raisins should never be used in baking) and replaced them with mini M&M’s. Mini M&M’s give it just enough chocolate so that the chocolate is not overpowering and they are just darn cute. Anything in its mini form is cute except Mini Me, he was a little creepy. Anyways, I prefer milk chocolate to semi-sweet in this recipe mainly to the fact that they rarely get baked because the dough is so good.
For you Friends fans this is actually the cookie recipe that makes the other cookies jealous so you may not want to make them that much.
OK, OK, onto the recipe.
Oatmeal Cookie Dough That Makes the Other Cookies Jealous
(it is suggested that you double this recipe so there is enough to eat and bake)
3/4 c. vegetable shortening
1 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1/4 c. water
1 tsp. vanilla
3 c. oats uncooked (quick oats are better)
1 c. all-purpose flour
1 tsp. salt
1/2 tsp. soda
Preheat oven to 350 F. Beat together shortening, sugars, egg, water and vanilla until creamy and fluffy. Add combined remaining ingredients; mix well. Drop rounded spoonfuls onto greased cookie sheet.
Bake at 350 for 12-15 minutes.
These cookies are better gooey so don’t use butter instead of shortening unless you like crunchy cookies. I usually bake mine for 14 minutes so they are soft and stay soft. Everyone’s oven is different so experiment with yours. Cookies are done when you see the tops turning a light golden brown. If bottoms are dark brown they will be crunchy.
Remember cooling cookies harden up so they may appear really soft but just give them time.
